A beautifully light and refreshing green tea, this Kamairicha offers a softer, more delicate expression of Japanese tea. Pan fired rather than steamed , Kamairicha is a specialty of Kyushu and is famed for its subtle taste and warm roasty aroma.

With a vibrant yellow-green liquor that stays bright across multiple infusions, and its nutty and toasted notes, this tea is as warm and bright as a summers day.

How to brew

  1. Warm your teaware by rinsing with freshly boiled water. This helps maintain temperature during brewing.
  2. Heat water to 100°C, then allow it to cool to approximately 70°C.
  3. Add 3g of tea leaves per person to your kyusu or teapot, and pour over 100ml of water per serving.
  4. Steep for 60 seconds, then pour evenly between cups if serving multiple people to ensure a balanced infusion.
  5. Re-infuse the leaves up to two additional times, using slightly hotter water and shorter steeping times with each brew.

I recommend this method for this tea, but feel free to experiment with water temperature, leaf ratio, and steeping time to suit your personal taste.

Tasting notes

The flavour profile of this tea is refreshingly clean, and it truly offers something different.

The roasting process becomes evident as soon as you open the bag. Smoky notes of roasted corn are the first thing you detect. The large curly leaves are uniquely beautiful.

The first steep yields a brilliant golden liquor, clear and vibrant. Roasted corn and cereal notes mingle with subtle vegetal notes more akin to a conventional green tea. This Kamairicha boasts almost zero bitterness and a mild astringency.

Exceptionally refreshing, this tea provides a welcome contrast to deeper, more savoury green teas. With each successive infusion, the liquor seems to grow even more luminous as the roasted notes gradually soften, revealing a smoother, lighter character beneath. After every sip, savour the gentle sweetness that sits on the tongue.

The second and third steeps are particularly rewarding, offering a different expression of the tea while retaining its clean and elegant profile.

Produced by Miyazaki Sabō, an award-winning organic tea farm in the mountain village of Gokase, Miyazaki Prefecture. The Miyazaki family has been cultivating tea without synthetic pesticides or fertilisers for over 40 years and is widely regarded as one of Japan's foremost producers of traditional kamairicha.

Cultivar and production

This is tea is of the Yabukita variety, Japan's most popular cultivars renowned for its reliability and balanced structure.

Kamaricha differs from other green teas in that the freshly picked leaves are pan-roasted instead of steamed. This process rapidly halts oxidation and shifts the flavour profile away from classic vegetal or "sea-weedy" notes to warmer more roasted ones.

The roasted leaves are then rolled while still warm which gives them their unique comma-like shape.

Kamairicha makes up only 1-2% of green tea produced annually in Japan, making this tea a truly rare and special treat.
